One of the ways I channel my energy is turning on some good tunes & getting creative in the kitchen. Using family recipes or traditionally loved recipes as a base & morphing them into something more nutrient dense.
Focusing on food for fuel without it sucking of course. Removing the stigma that "healthy food is gross" is something I'm passionate about. It should be the exact opposite. Fresh nutrient dense food, not drenched in cheap cane sugar or worse corn syrup to make it addictive rather than nutritious, should be more flavorful & satisfying. Life is too short to eat cheap, crappy food.
I saw this idea of using chickpeas instead of flour for muffins & thought...huh... let's explore that. So below is my rendition. I will warn you...these are DAMN DELICIOUS!
Fun Fact: Contains micronutrients like manganese, magnesium, B6 & zinc.
Ok let's wrap this up...my kid is coloring with a marker...below is the scrumptious PEANUT BUTTER CHOCOLATE CHICKPEA MUFFINS. These gems are grain free & loaded with -plant protein!
*Almond Butter is a great alternative especially for those who can't enjoy peanuts
*Milk or any Milk alternative is suitable with this recipe
*I used half maple syrup half Lakanto Maple Flavored Syrup
(Less sugar without omitting flavor!)
